Knoxville Blog Friends + Brie Stuffed Garlic Bread

Hi friends!
Monday night I met up with some Knoxville bloggers at Kabuki for wine and sushi! (Kabuki may or may not have been suggested by me and Lauren- we’re obsessed) It was so much fun reconnecting with some girls I haven’t seen in forever and getting to see a few girls I had never met before. It was so nice to not do mom things for a change and get to chat with the girls about anything and everything and go through multiple bottles of Gnarly Head. We got there around 6 and pretty much closed the place down (all while getting multiple stares from some cranky old women for being loud). Whoops.

I woke up Tuesday feeling blah and was lazy ALL day. You cannot tell by this picture but Levi was in a weirdly good mood and had very few “behavior issues” as I like to call them these days. But seriously when he is bad, how could you be mad at this child?

For dinner I made homemade vegetable soup and french bread with Brie, and both got a thumbs up from Stu and my parents. Win! The picture does not do the soup justice, it was delicious. It was loaded with veggies and slow-cooked on the stove for hours.

 I am going to leave you with the bread recipe from last night’s dinner. You will thank me for this one!

Brie-Stuffed Garlic Bread

- 1 loaf french bread (I used whole-wheat)
- 1 wheel Brie cheese, with rind trimmed off
- 1 tsp. olive oil
- garlic powder, basil, salt & pepper (to taste)

- Preheat oven to 375
- Cut about 8 slits into bread, cutting about half way through
- Stuff each slit with a slice of Brie
- Drizzle with olive oil and bake in the oven for 5 minutes
- Remove bread from oven. Set to low-broil
- Top toasted bread with remaining Brie and season generously with the garlic powder and basil. Finish with a pinch of salt and pepper.
- Place back in oven and broil for 5 minutes.
